The science of cooking is in fact an art

Science is fact backed by empirical evidence. Art is sans any semblance of proof, empirical or theoretical. It is simply a flight of imagination - free and easy. I find that very liberating. No facts to prove and nobody to convince. Of course, except my own self.  
That was about science and art - or my personal definition of both. Cooking with those two most diabolically opposite things is very endearing to me. I cannot take one without the other. When physics and chemistry explain how something is cooked or why it didn't turn out the way it was intended to, the art of choosing or discarding any or many of the ingredients used during cooking and the timing of introducing those in the marination or actual cooking is very artistic. Art guides science and the other way around. The discipline of cooking is very scientific but the rationale of the choices you make to cook something has to be very artistic for the science to be not lost on the palate.
